When we do our annual detoxes, we always email around some healthy recipe ideas. Here’s one from Naomi.
My sugar free muesli
It takes awhile, but mostly not with you in the kitchen, particularly if you have a dehydrator or an oven with a timer & is very much worth the trouble. Inspired by Sarah Wilson’s recipe for ‘coco-nutty museli’ on her blog)
2 cups mixed nuts (i like cashew, almond, walnut – but also can use pistachio, macadamia, pecan or even brazil)
1 cup mixed seeds (chia, sunflower, pepitas)
3 cups flaked coconut
3 or 4 tblsp coconut oil
Optional: Rice syrup or maple syrup or honey (at most 1 tblsp)
Soak almonds and walnuts overnight, cashews (or pistachios, macadamia or pecan) and seeds for 2h in warm water out of the fridge.
Drain and dehydrate in a low oven (<50 degrees) for 3 hours (1 h for seeds) or until dry
Mix all the nuts & seeds in a bowl with melted coconut oil and syrup (if using)
Bake at 120 degrees for 20 – 30 minutes, or until crunchy and brown
Store in sterile glass jars for up to three weeks. This makes enough for me and my 18mo for about 10 days, but I double it!!
Eat as a snack, or with yogurt and berries for breakfast – Yummy!!
